Cucumber, Tomato & Olive Oil Salad Recipe



  • 2 medium cucumbers,peeled and sliced
  • 4 medium tomatoes, diced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons Colosseum extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


  • In a large bowl, combine the sliced cucumbers, diced tomatoes, red onion, parsley, and mint.
  • In a separate small bowl, whisk together Colosseum extra virgin olive oil and lemon juice.
  • Season with salt and pepper to taste.
  • Pour the dressing over the cucumber and tomato mixture. Toss gently to coat all the ingredients with the dressing.
  • Let the salad sit for about 10 minutes to allow the flavors to meld together.
